Ingredients to make Cheesy Garlic Chicken Wrap
2 boneless, skinless chicken breasts (or thighs), cooked and shredded or diced
1 tbsp olive oil or butter
3 garlic cloves, minced
½ tsp smoked paprika
Salt and black pepper to taste
½ cup shredded mozzarella cheese
½ cup shredded cheddar cheese
¼ cup cream cheese (softened)
2 tbsp mayonnaise or Greek yogurt
1 tbsp chopped fresh parsley (optional)
2–4 large tortillas or wraps
Optional: lettuce, tomatoes, red onion, jalapeños, or any of your favorite fillings
Step by step Instructions
Cook the Garlic Chicken
Add olive oil or butter in a skillet and place over medium heat.
Add finely chopped garlic, then sauté for 30 seconds or until fragrant, stirring often. Be careful to not burn the garlic as this happens very quickly with minced garlic.
Add cooked chicken, paprika, salt and pepper to it. This will give flavor and color to the chicken. Mix well to evenly coat the chicken in added spices and garlic.
Cook for 2- 3 minutes to get the chicken hot all the way to the center.
Make the Cheesy Mixture
Take a good-sized mixing bowl and add to it shredded mozzarella, cheddar, cream cheese, and mayo or Greek yogurt for a lighter touch.
Notes: For the cream cheese you can add full-fat, light or whatever you prefer.
Now add the warm garlic and chicken into the cheese mixture and give it a good stir.
For the some color and freshness, stir in some chopped parsley.
Assemble the Wraps
To get a perfect base for your wrap, you’ll want to warm up your tortillas. Just a few seconds in a pan or microwave will do the trick.
Grab a generous spoonful or two of cheesy garlic chicken mixture and place it right in the center of warmed tortillas.
You can add some optional fillings like some crispy lettuce, tomatoes or a zing of red onion.
Carefully fold and roll up the wrap tightly like a burrito.
Toast (Optional but Recommended)
For some extra crispiness, pop the wraps in a dry skillet over medium heat. A minute or two per side is all it takes to get the golden crunch and make the cheese gooey.
Serve
Slice in half and serve immediately. It goes perfectly well with a side of chips, salad, or fries.
Tips:
Use rotisserie chicken to save time. Just shred it up and you are ready to go.
For a spicy kick, don’t be shy with that hot sauce or chili flakes.
If you are like me and always looking for ways to sneak in some extra nutrition, try swapping out those regular tortillas for spinach or whole wheat ones. You can also add spinach as your inside filling of the wrap. This way, you’re making it healthier without sacrificing flavor.
Recipe Notes:
- Type of Chicken:
Grilled, roasted, or rotisserie chicken all work well. Season your chicken well before cooking for maximum flavor however, leftover chicken is also great for this recipe. - Cheese Variations:
Feel free to mix up the cheese! Monterey Jack, Colby, or even Pepper Jack can be used for a different flavor profile. Use what you love or already have in your fridge. - Creaminess Level:
Adjust the amount of cream cheese or mayo to your preferred creaminess. Greek yogurt is a lighter option and adds a bit of tang. - Wrap Options:
- You can use flour tortillas, whole wheat wraps, spinach tortillas, or even low-carb wraps. For a lighter version, serve the cheesy chicken in lettuce wraps.
- Make it Spicy:
- Add chili flakes, hot sauce, or chopped jalapeños to the chicken mixture if you enjoy heat.
